Peach Burrata Salad

FoodWrite has created a Peach Burrata Salad for two – a fresh, vibrant summer dish that’s simple yet elegant. This is a common pairing based on what we’ve seen in many US based cooking sites which have been promoting the fruit of the month – peaches. So we combine segments of sweet peaches, creamy burrata, and peppery arugula with a tangy-sweet dressing. Great as an appetizer or light lunch.


Ingredients (Serves 2)

Salad:

  • 2 ripe peaches, sliced into wedges (freestone if possible)

  • 1 ball of burrata cheese (about 4 oz or 125g) or Mozzarella cheese if unavailable.

  • 2 cups arugula or baby greens

  • ¼ cup toasted pine nuts or slivered almonds (optional for crunch)

  • 6–8 fresh basil leaves, torn or julienned

  • Freshly cracked black pepper, to taste

  • Sea salt or flaky salt, to taste

Dressing:

  • 1½ tbsp extra virgin olive oil

  • 1 tbsp balsamic glaze or reduction (or substitute with aged balsamic vinegar)

  • ½ tsp honey (optional, if peaches aren’t sweet)

  • ½ tsp Dijon mustard

  • Juice of ½ lemon (about 1 tbsp)


Equipment Needed

  • Sharp knife

  • Cutting board

  • Mixing bowl

  • Small jar or bowl (for dressing)

  • Whisk or fork

  • Serving plates

  • Spoon or tongs


Time

  • Prep Time: 10 minutes

  • Cooking Time: 5 minutes (if toasting nuts)

  • Total Time: 15 minutes


Preparation

1. Toast Nuts (Optional)

If using nuts, toast them in a dry skillet over medium heat for 2–3 minutes until golden and fragrant. Stir constantly to prevent burning. Set aside to cool.

2. Make the Dressing

In a small bowl or jar, whisk together olive oil, balsamic glaze, lemon juice, Dijon mustard, and honey until emulsified. Taste and adjust sweetness/acidity as needed.

3. Prepare the Salad

  • Wash and dry arugula and basil.

  • Slice peaches into wedges (skin on is fine).

  • Tear the burrata gently into chunks if you prefer it spread across the salad.

4. Assemble

  • On two plates or a platter, lay a bed of arugula.

  • Scatter peach slices and burrata chunks evenly.

  • Sprinkle with basil, toasted nuts, salt, and pepper.

  • Drizzle with the dressing just before serving.

💡 You can reduce fat/calories slightly by using less burrata or olive oil, and increase protein by adding prosciutto or grilled chicken.
