Salsa Verde is this vibrant, zesty sauce is perfect as a topping for tacos, grilled meats, roasted potatoes such as Hasselbacks or as a dip with chips. It is a great topping for fish like John Dory. Serves 4.
Ingredients
- 6 medium tomatillos, husked and rinsed
- 1-2 jalapeño peppers (depending on your heat preference), stemmed and seeded
- 1/4 medium white onion
- 1 garlic clove, peeled
- 1/4 cup fresh cilantro leaves
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt (or to taste)
- 1/8 teaspoon ground cumin (optional)
- 1 teaspoon olive oil (optional, for a smoother texture)
Preparation
- Prepare the Ingredients:
- Husk and rinse the tomatillos to remove the sticky residue.
- Halve the jalapeño peppers and remove the seeds for less heat (or leave them in if you prefer spicier salsa).
- Chop the onion into large chunks.
- Cook the Tomatillos and Jalapeños:
- Boiling Method (10 minutes): Place the tomatillos and jalapeños in a saucepan and cover with water. Bring to a boil and cook for about 5 minutes, or until the tomatillos are soft and slightly pale.
- Roasting Method (15 minutes): Preheat the broiler. Place the tomatillos, jalapeños, and onion on a baking sheet. Broil for 5-7 minutes, turning halfway through, until the tomatillos are charred and softened.
- Blend the Salsa:
- Transfer the cooked tomatillos, jalapeños, onion, garlic, cilantro, lime juice, salt, and cumin to a blender or food processor. Blend until smooth. For a smoother consistency, you can add the optional teaspoon of olive oil while blending.
- Adjust Seasoning:
- Taste the salsa and adjust the salt or lime juice as needed.
- Serve:
- Pour the salsa into a bowl and serve immediately, or refrigerate for up to 3 days. It can be served warm, at room temperature, or chilled.
