Ingredients for Milanese di pollo:
- 4 chicken breasts, boneless and skinless
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 1/2 cups breadcrumbs
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- 1/2 cup vegetable oil
Ingredients for creamy mashed potatoes:
- 4 large potatoes, peeled and cut into chunks
- 1/2 cup milk
- 1/4 cup butter
- Salt and pepper to taste
Preparation:
- Preheat oven to 375°F.
- Pound the chicken breasts to an even thickness.
- In a shallow dish, season the flour with salt and pepper.
- Dredge each chicken breast in the flour, shaking off any excess.
- Dip the chicken in the beaten eggs, then coat it in a mixture of breadcrumbs and parmesan cheese.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown.
- Transfer the chicken to a baking sheet and bake for 10-12 minutes, until fully cooked.
- While the chicken is baking, prepare the mashed potatoes. Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add the milk, butter, salt, and pepper, and mash until smooth and creamy.
- Serve the Milanese di pollo with a generous portion of creamy mashed potatoes on the side.
