How to Prepare Milanese di Pollo

Ingredients for Milanese di pollo:

  • 4 chicken breasts, boneless and skinless
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cups breadcrumbs
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup vegetable oil

Ingredients for creamy mashed potatoes:

  • 4 large potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste

Preparation:

  1. Preheat oven to 375°F.
  2. Pound the chicken breasts to an even thickness.
  3. In a shallow dish, season the flour with salt and pepper.
  4. Dredge each chicken breast in the flour, shaking off any excess.
  5. Dip the chicken in the beaten eggs, then coat it in a mixture of breadcrumbs and parmesan cheese.
  6. Heat the vegetable oil in a large skillet over medium-high heat.
  7. Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown.
  8. Transfer the chicken to a baking sheet and bake for 10-12 minutes, until fully cooked.
  9. While the chicken is baking, prepare the mashed potatoes. Boil the potatoes in salted water until tender, about 15-20 minutes.
  10. Drain the potatoes and return them to the pot.
  11. Add the milk, butter, salt, and pepper, and mash until smooth and creamy.
  12. Serve the Milanese di pollo with a generous portion of creamy mashed potatoes on the side.
