Ingredients:
- 8 oz. chow mein noodles
- 1 cup sliced mushrooms
- 1 cup sliced bell peppers
- 1 cup sliced carrots
- 1 cup sliced cabbage
- 1 cup bean sprouts
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (vegetarian oyster sauce or mushroom sauce for a vegetarian version)
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
Preparation:
- Cook the chow mein noodles according to the package instructions. Drain and set aside.
- In a mixing bowl, whisk together the soy sauce, oyster sauce, and cornstarch. Set aside.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds.
- Add the sliced mushrooms, bell peppers, carrots, and cabbage to the wok. Stir-fry for 3-4 minutes or until the vegetables are tender but still crispy.
- Add the bean sprouts and cooked chow mein noodles to the wok. Stir-fry for 1-2 minutes to combine everything.
- Pour the soy sauce mixture over the noodles and vegetables. Stir-fry for another minute or until the sauce thickens and coats the noodles and vegetables evenly.
