Ingredients:
For the marinade:
- 800 grams (1.7 lbs) pork shoulder or pork tenderloin, thinly sliced

- 1 teaspoon paprika

- 4 pita bread rounds
- Tzatziki sauce (store-bought or homemade)
- Sliced tomatoes, onions, and cucumbers

Preparation:
- In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, ground coriander, salt, and pepper to create the marinade.
- Add the thinly sliced pork to the marinade and toss to coat the meat thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to overnight to allow the flavors to develop.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated pork slices onto skewers, dividing them evenly among the skewers.
- Grill the pork skewers for about 5-7 minutes per side or until the meat is cooked through and nicely charred. Ensure the pork reaches an internal temperature of 145°F (63°C). Remove from the grill and let them rest for a few minutes.
- While the pork is resting, warm the pita bread rounds on the grill or in a toaster.
- To serve, spread a generous amount of tzatziki sauce onto each warm pita bread round.
- Place a few slices of the grilled pork onto each pita bread.
- Top with sliced tomatoes, onions, and cucumbers. You can also add fresh parsley or dill for added freshness.
- Squeeze a little lemon juice over the toppings if desired.
- Fold the pita bread over the fillings, creating a pocket or wrap.
Serve the pork gyros immediately while it’s still warm. It pairs well with a side of Greek salad, roasted potatoes, or fries.
