How to Make Chilaquiles with Fried Eggs

A recipe for chilaquiles and fried eggs with spicy chicken topped with lime slices that serves 6 people

Ingredients:

For the chilaquiles:

  • 12-18 corn tortillas, cut into quarters
  • 2 cups of tomato sauce
  • 1/2 cup of chicken broth
  • 1/2 cup of chopped onion
  • 1/4 cup of chopped cilantro
  • 1-2 tablespoons of vegetable oil
  • Salt and pepper, to taste

For the spicy chicken:

  • 1 1/2 pounds of boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper, to taste

For the fried eggs:

  • 6 large eggs
  • 1 tablespoon of vegetable oil
  • Salt and pepper, to taste

For serving:

  • Lime slices
  • Sliced avocado (optional)

Preparation:

  1. Preheat your oven to 375°F.
  2. To make the chilaquiles, heat 1-2 tablespoons of vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  3. Add the tomato sauce and chicken broth to the skillet and stir to combine. Season with salt and pepper, to taste.
  4. Add the corn tortilla quarters to the skillet and stir until they are coated in the sauce. Cook for a few minutes, until the tortillas have softened but are still slightly crispy.
  5. Transfer the skillet to the oven and bake for 10-15 minutes, until the chilaquiles are hot and bubbly.
  6. While the chilaquiles are baking, prepare the spicy chicken. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 8-10 minutes.
  7. Season the chicken with chili powder, cumin, salt, and pepper, to taste.
  8. To fry the eggs, heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes.
  9. To serve, divide the chilaquiles and spicy chicken among 6 plates. Top each plate with a fried egg and a sprinkle of chopped cilantro. Serve with lime slices and sliced avocado, if desired.
  10. Enjoy your delicious chilaquiles and fried eggs with spicy chicken topped with lime slices!

Note: You can adjust the level of spiciness by using more or less chili powder or adding sliced jalapenos. You can also add crumbled cotija cheese or sour cream as a garnish.
