How to Make a Simple Spicy Carrot soup

Carrot soup is a delicious and easy-to-make soup that can be enjoyed as a starter or as a main course. 

Ingredients:

  • 1 pound carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: heavy cream, croutons, chopped herbs (such as parsley or cilantro) for garnish

Preparation:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic and sauté until softened and fragrant, about 5 minutes.
  3. Add chopped carrots and sauté for another 5 minutes, stirring occasionally.
  4. Add vegetable or chicken broth, ground ginger, cinnamon, and cumin to the pot and bring to a boil.
  5. Reduce heat to low and simmer for about 20-25 minutes or until the carrots are soft and tender.
  6. Remove the pot from the heat and let it cool for a few minutes.
  7. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  8. If desired, stir in some heavy cream to make the soup creamier.
  9. Season with salt and pepper to taste.
  10. Serve hot with croutons and chopped herbs on top, if desired.
