Carrot soup is a delicious and easy-to-make soup that can be enjoyed as a starter or as a main course.
Ingredients:
- 1 pound carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: heavy cream, croutons, chopped herbs (such as parsley or cilantro) for garnish
Preparation:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic and sauté until softened and fragrant, about 5 minutes.
- Add chopped carrots and sauté for another 5 minutes, stirring occasionally.
- Add vegetable or chicken broth, ground ginger, cinnamon, and cumin to the pot and bring to a boil.
- Reduce heat to low and simmer for about 20-25 minutes or until the carrots are soft and tender.
- Remove the pot from the heat and let it cool for a few minutes.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- If desired, stir in some heavy cream to make the soup creamier.
- Season with salt and pepper to taste.
- Serve hot with croutons and chopped herbs on top, if desired.
