How to Make a Mushroom Soup

Ingredients for Mushroom Soup:

  • 500g fresh mushrooms, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish (optional)

Preparation of Mushroom Soup:

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the onions and garlic, and cook until they are softened, about 5 minutes.
  2. Add the sliced mushrooms and thyme, and cook for another 5-7 minutes, until the mushrooms are tender.
  3. Sprinkle the flour over the mushroom mixture, and stir to combine. Cook for 1-2 minutes, stirring constantly.
  4. Gradually pour in the chicken or vegetable broth, stirring constantly, until the mixture comes to a simmer.
  5. Reduce the heat to low and let the soup simmer for 15-20 minutes, stirring occasionally.
  6. Add the heavy cream to the soup and stir to combine. Cook for another 5 minutes.
  7. Using an immersion blender or a regular blender, blend the soup until it reaches your desired consistency. Be careful not to over-blend or it will become too thick.
  8. Season with salt and pepper to taste.
  9. Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve hot and enjoy!
