Ingredients for Mushroom Soup:
- 500g fresh mushrooms, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley, for garnish (optional)
Preparation of Mushroom Soup:
- In a large pot or Dutch oven, melt the butter over medium heat. Add the onions and garlic, and cook until they are softened, about 5 minutes.
- Add the sliced mushrooms and thyme, and cook for another 5-7 minutes, until the mushrooms are tender.
- Sprinkle the flour over the mushroom mixture, and stir to combine. Cook for 1-2 minutes, stirring constantly.
- Gradually pour in the chicken or vegetable broth, stirring constantly, until the mixture comes to a simmer.
- Reduce the heat to low and let the soup simmer for 15-20 minutes, stirring occasionally.
- Add the heavy cream to the soup and stir to combine. Cook for another 5 minutes.
- Using an immersion blender or a regular blender, blend the soup until it reaches your desired consistency. Be careful not to over-blend or it will become too thick.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve hot and enjoy!
