Duchess’s Pudding
Preparation time is 20 to 30 minutes, cooking time is 1.5 to 2 hours.
Serves 6
Ingredients:
- 120g (4oz) unsalted butter, softened with some extra for greasing
- 120g (4oz) caster sugar
- 2 egg beaten
- 150g (5oz) self-raising flour
- 60g (2oz) chopped mixed dried fruit
- 30g (1oz) glace cherries, chopped
- 30g (1oz) shelled walnuts, chopped
- Few drops of almond essence
- milk to mix
- custard for serving
Preparation:
- Grease a 1.1 litre (2 pint) pudding basin. In a mixing bowl, cream together the butter and sugar until pale and fluffy. Gradually add the eggs to the creamed mixture, beating well after each addition.
- Sift in the flour. Add the mixed fruit, cherries, nuts, almond essence and enough milk to produce a soft dropping consistency. Pour into the greased basin, cover with a lid or foil and steam for between 1.5 hours and 2 hours. Turn out and serve with some custard.
