Ingredients:
- 1 lb. linguine pasta
- 1 lb. blue crab meat, picked and cleaned
- 4 cloves garlic, minced
- 1-2 fresh red chili peppers, minced (depending on your desired level of heat)
- 1 pint cherry tomatoes, halved
- 1/2 cup dry white wine
- 1/2 cup unsalted butter
- Salt and pepper to taste
- Fresh herbs (parsley, basil or thyme) for garnish
Preparation:
- Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to the package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
- Sauté the garlic and chili: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chili pepper and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the cherry tomatoes: Add the cherry tomatoes to the skillet and continue to sauté for 3-4 minutes until they begin to soften and release their juices.
- Add the white wine: Pour in the white wine and stir to deglaze the pan. Simmer for 2-3 minutes until the wine has reduced by half.
- Add the butter: Cut the unsalted butter into small pieces and add it to the skillet, stirring constantly until it has melted and incorporated into the sauce.
