Ingredients:
- 6 slices of white bread, crusts removed
- 2 tablespoons of softened butter
- 1/2 cup of dark chocolate chips or chopped dark chocolate
- 1/4 cup of raisins
- 1/4 cup of dried cranberries
- Zest of one orange
- 2 cups of whole milk
- 3 large eggs
- 1/4 cup of granulated sugar
- 1/2 teaspoon of vanilla extract
For the drizzle:
- 20g dark chocolate (70% cocoa solids), finely chopped
Preparation:
- Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) square baking dish with butter.
- Spread the softened butter over each slice of bread. Cut the bread into triangles.
- Arrange a layer of bread triangles in the bottom of the baking dish, overlapping slightly. Sprinkle half of the chocolate chips or chopped chocolate over the bread.
- Sprinkle half of the raisins, cranberries, and orange zest over the chocolate. Repeat the layers of bread, chocolate, raisins, cranberries, and orange zest, ending with a layer of bread.
- In a medium bowl, whisk together the milk, eggs, sugar, and vanilla extract until well combined.
- Pour the milk mixture over the bread layers in the baking dish, making sure that all the bread is soaked in the mixture.
- Let the pudding sit for 10 minutes so that the bread absorbs the milk mixture.
- Bake for 45-50 minutes, or until the top is golden brown and the custard is set.
- Remove the baking dish from the oven and let it cool for a few minutes before serving.
- Serve the chocolate bread and butter pudding warm with whipped cream or vanilla ice cream, if desired.
