Chilled Cream of Banana Soup

Here’s a vegetarian chilled cream of banana soup recipe for two, ideal as a light dessert or starter. It’s creamy, subtly sweet, and refreshing.


Chilled Cream of Banana Soup (for 2 servings)

 Ingredients:

  • 2 ripe bananas

  • 1 cup whole milk or plant-based milk (e.g. oat or almond milk)

  • 1/2 cup heavy cream or coconut cream (for vegan)

  • 1 tbsp honey or maple syrup (adjust to taste)

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • 1/4 tsp ground cinnamon

  • Optional: 1/4 tsp lemon or lime zest (to brighten the flavor)


 Preparation:

  1. Prep the bananas:
    Peel and slice the bananas. Add to blender.

  2. Blend base:
    Add milk, cream, honey/maple syrup, vanilla, salt, and cinnamon to the blender. Blend until smooth and creamy.

  3. Optional simmer (for flavor infusion):
    Pour the mixture into a small saucepan. Heat gently over low heat for 3–5 minutes while stirring (do not boil). This step enhances flavor but can be skipped for a raw version.

  4. Strain (optional):
    Pour the soup through a fine mesh strainer into a bowl for extra smoothness.

  5. Chill:
    Cover and refrigerate for at least 1 hour.

  6. Serve:
    Stir before serving. Garnish with a sprinkle of cinnamon, banana slices, mint leaves, or a swirl of cream.
