Ingredients
For the Salad
- 200g beef pastrami, thinly sliced
- 4 cups mixed lettuce (such as romaine, arugula, and radicchio)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, thinly sliced
- 2 tablespoons capers (optional)
For the Sweet Mustard Dressing
- 3 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
Preparation
- Prepare the Salad
- Wash and dry the lettuce. Tear into bite-sized pieces and place in a large salad bowl.
- Add the cherry tomatoes, red onion, and cucumber to the bowl.
- If using, sprinkle the capers over the salad.
- Prepare the Dressing
- In a small bowl, combine the Dijon mustard, whole grain mustard, honey, and apple cider vinegar. Mix well.
- Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
- Season with salt and pepper to taste.
- Assemble the Salad
- Arrange the lettuce mixture evenly on two plates.
- Drape the thin slices of beef pastrami over the top of the salad.
- Dress the Salad
- Drizzle the sweet mustard dressing over the pastrami and lettuce.
- Serve
- Serve immediately as a starter, accompanied by crusty bread if desired.
