Beef Pastrami on a Bed of Lettuce with Sweet Mustard Dressing

Ingredients

For the Salad

  • 200g beef pastrami, thinly sliced
  • 4 cups mixed lettuce (such as romaine, arugula, and radicchio)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 2 tablespoons capers (optional)

For the Sweet Mustard Dressing

  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Preparation

  1. Prepare the Salad
    • Wash and dry the lettuce. Tear into bite-sized pieces and place in a large salad bowl.
    • Add the cherry tomatoes, red onion, and cucumber to the bowl.
    • If using, sprinkle the capers over the salad.
  2. Prepare the Dressing
    • In a small bowl, combine the Dijon mustard, whole grain mustard, honey, and apple cider vinegar. Mix well.
    • Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
    • Season with salt and pepper to taste.
  3. Assemble the Salad
    • Arrange the lettuce mixture evenly on two plates.
    • Drape the thin slices of beef pastrami over the top of the salad.
  4. Dress the Salad
    • Drizzle the sweet mustard dressing over the pastrami and lettuce.
  5. Serve
    • Serve immediately as a starter, accompanied by crusty bread if desired.
