King Prawn and Mixed Meat Foo Yung (Chinese-style fried egg omelette)

A recipe for King Prawn and Mixed Meat Foo Yung (Chinese-style fried egg omelette) that serves two people.

Ingredients

For the Foo Yung

  • 4 large eggs
  • 1/2 cup cooked king prawns, peeled and deveined
  • 1/2 cup cooked mixed meats (such as roast pork, chicken, or beef), thinly sliced or diced
  • 1/2 cup bean sprouts
  • 1/4 cup carrots, julienned
  • 1/4 cup bell pepper, thinly sliced (any color)
  • 1/4 cup green onions, chopped (white and green parts separated)
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and freshly ground black pepper, to taste

For the Sauce (Optional)

  • 1/2 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
  • 1/2 teaspoon sesame oil

Preparation

Prepare the Eggs:

  1. Whisk the Eggs:
    • Crack the eggs into a medium bowl. Add a pinch of salt and a few grinds of black pepper. Whisk until well combined and slightly frothy.

Prepare the Sauce (Optional):

  1. Combine the Ingredients:
    • In a small saucepan, combine the chicken broth, soy sauce, oyster sauce, and sesame oil. Bring to a simmer over medium heat.
    • Stir in the cornstarch mixture and continue to cook until the sauce thickens, about 1-2 minutes. Remove from heat and set aside.

Cook the Foo Yung:

  1. Heat the Oil:
    • Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.
  2. Stir-fry the Ingredients:
    • Add the minced garlic and the white parts of the green onions. Stir-fry for about 30 seconds until fragrant.
    • Add the julienned carrots, sliced bell pepper, and bean sprouts. Stir-fry for about 2-3 minutes until the vegetables are tender-crisp.
    • Add the cooked king prawns and mixed meats. Stir-fry for another 1-2 minutes until heated through.
  3. Add the Eggs:
    • Push the cooked ingredients to the sides of the skillet, creating a well in the center. Add a bit more oil if needed.
    • Pour the whisked eggs into the center of the skillet. Let the eggs cook undisturbed for about 1-2 minutes until they start to set around the edges.
  4. Combine Everything:
    • Gently stir the eggs and mix them with the other ingredients. Cook for another 2-3 minutes, stirring occasionally, until the eggs are fully set and cooked through.

Serve:

  1. Plate the Foo Yung:
    • Divide the Foo Yung between two plates.
  2. Add the Sauce (Optional):
    • Drizzle the prepared sauce over the Foo Yung if using.
  3. Garnish:
    • Garnish with the green parts of the green onions.

Serving Suggestions

  • Serve the King Prawn and Mixed Meat Foo Yung with steamed rice or noodles.
