Ingredients

- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup feta cheese, crumbled

- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh mint, finely chopped (optional)
- 1 small onion, finely chopped
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground sumac (optional)
- 1/4 teaspoon cayenne pepper (adjust to your spice preference)
Preparation
For the Dough:
- In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter.
- Use your fingertips or a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the plain yogurt, mixing with a spoon or your hands until the dough comes together. You may need to add a bit more yogurt or flour to achieve the right consistency. The dough should be smooth and elastic.

- Place about 2-3 tablespoons of the cheese and herb filling in the center of the dough circle.

- Repeat this process with the remaining dough and filling, making a total of six sambousik pastries.
- Place the assembled pastries on the prepared baking sheet.
Baking:
