How to Prepare a Pork Gyros

Pork gyros is a popular Greek dish consisting of marinated and roasted pork slices wrapped in pita bread and served with delicious toppings and sauces. Here’s a recipe to prepare pork gyros for four people:

Ingredients:

For the marinade:

  • 800 grams (1.7 lbs) pork shoulder or pork tenderloin, thinly sliced
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves of garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper (to taste)

For serving:

  • 4 pita bread rounds
  • Tzatziki sauce (store-bought or homemade)
  • Sliced tomatoes, onions, and cucumbers
  • Fresh parsley or dill (for garnish, optional)
  • Lemon wedges (for serving)

Preparation:

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, ground coriander, salt, and pepper to create the marinade.
  2. Add the thinly sliced pork to the marinade and toss to coat the meat thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to overnight to allow the flavors to develop.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated pork slices onto skewers, dividing them evenly among the skewers.
  5. Grill the pork skewers for about 5-7 minutes per side or until the meat is cooked through and nicely charred. Ensure the pork reaches an internal temperature of 145°F (63°C). Remove from the grill and let them rest for a few minutes.
  6. While the pork is resting, warm the pita bread rounds on the grill or in a toaster.
  7. To serve, spread a generous amount of tzatziki sauce onto each warm pita bread round.
  8. Place a few slices of the grilled pork onto each pita bread.
  9. Top with sliced tomatoes, onions, and cucumbers. You can also add fresh parsley or dill for added freshness.
  10. Squeeze a little lemon juice over the toppings if desired.
  11. Fold the pita bread over the fillings, creating a pocket or wrap.

Serve the pork gyros immediately while it’s still warm. It pairs well with a side of Greek salad, roasted potatoes, or fries.
