How to prepare a Pork Souvlaki

The classic Pork Souvlaki.

Serves 4.

Ingredients:

  • 800 grams (1.7 lbs) pork tenderloin, cut into 1-inch cubes
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper (to taste)
  • 4 pita bread rounds
  • Tzatziki sauce (store-bought or homemade)
  • Sliced tomatoes, onions, and cucumbers (for serving)
  • Fresh parsley or dill (for garnish, optional)
  1. Place the pork cubes in a bowl.
  2. In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper to create the marinade.
  3. Pour the marinade over the pork cubes, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to overnight to allow the flavors to develop.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated pork cubes onto skewers, dividing them evenly among the skewers.
  6. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and has grill marks. Ensure the pork reaches an internal temperature of 145°F (63°C).
  7. While the pork is cooking, warm the pita bread rounds on the grill or in a toaster.
  8. Once the pork is done, remove the skewers from the grill and let them rest for a few minutes.
  9. To serve, spread a dollop of tzatziki sauce onto each warm pita bread round. Place a few pork skewers onto each pita.
  10. Garnish with sliced tomatoes, onions, and cucumbers. You can also sprinkle some fresh parsley or dill on top for added freshness.
  11. Fold the pita bread over the pork and toppings, creating a pocket or wrap.

Serve the pork souvlaki immediately while it’s still warm. It pairs well with a side of Greek salad or roasted vegetables. Enjoy your delicious homemade pork souvlaki!
