Chicken souvlaki is a classic of the Greek taverna. It pairs well with a side of Greek salad or roasted vegetables.
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves of garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper (to taste)
- 4 pita bread rounds
- Tzatziki sauce (store-bought or homemade)
- Sliced tomatoes, onions, and cucumbers (for serving)
- Fresh parsley or dill (for garnish, optional)
Preparation:
- Cut the chicken breasts into 1-inch cubes and place them in a bowl.
- In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper to create the marinade.
- Pour the marinade over the chicken cubes, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to overnight to allow the flavors to develop.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken cubes onto skewers, dividing them evenly among the skewers.
- Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has grill marks. Ensure the chicken reaches an internal temperature of 165°F (74°C).
- While the chicken is cooking, warm the pita bread rounds on the grill or in a toaster.
- Once the chicken is done, remove the skewers from the grill and let them rest for a few minutes.
- To serve, spread a dollop of tzatziki sauce onto each warm pita bread round. Place a few chicken skewers onto each pita.
- Garnish with sliced tomatoes, onions, and cucumbers. You can also sprinkle some fresh parsley or dill on top for added freshness.
- Fold the pita bread over the chicken and toppings, creating a pocket or wrap.
Serve the chicken souvlaki immediately while it’s still warm.

One of the best recipes I’ve come across for souvlaki. I started with your pork version and then tried chicken. What a revelation! Absolutley fantastic and I hope you do more. My man though does not eat cucumber as it makes him boff. Any suggestions?
