A recipe for chilaquiles and fried eggs with spicy chicken topped with lime slices that serves 6 people
Ingredients:
For the chilaquiles:
- 12-18 corn tortillas, cut into quarters
- 2 cups of tomato sauce
- 1/2 cup of chicken broth
- 1/2 cup of chopped onion
- 1/4 cup of chopped cilantro
- 1-2 tablespoons of vegetable oil
- Salt and pepper, to taste
For the spicy chicken:
- 1 1/2 pounds of boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons of vegetable oil
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- Salt and pepper, to taste
For the fried eggs:
- 6 large eggs
- 1 tablespoon of vegetable oil
- Salt and pepper, to taste
For serving:
- Lime slices
- Sliced avocado (optional)
Preparation:
- Preheat your oven to 375°F.
- To make the chilaquiles, heat 1-2 tablespoons of vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the tomato sauce and chicken broth to the skillet and stir to combine. Season with salt and pepper, to taste.
- Add the corn tortilla quarters to the skillet and stir until they are coated in the sauce. Cook for a few minutes, until the tortillas have softened but are still slightly crispy.
- Transfer the skillet to the oven and bake for 10-15 minutes, until the chilaquiles are hot and bubbly.
- While the chilaquiles are baking, prepare the spicy chicken. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 8-10 minutes.
- Season the chicken with chili powder, cumin, salt, and pepper, to taste.
- To fry the eggs, heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes.
- To serve, divide the chilaquiles and spicy chicken among 6 plates. Top each plate with a fried egg and a sprinkle of chopped cilantro. Serve with lime slices and sliced avocado, if desired.

Note: You can adjust the level of spiciness by using more or less chili powder or adding sliced jalapenos. You can also add crumbled cotija cheese or sour cream as a garnish.
