The breakfast fry-up is always welcome especially after a night out. One of the great ways to serve up a full breakfast is in the form of a frittata. You can try a version which uses baked beans for example but I think this version is an interesting take.
Serving: 2; Preparation Time: 10 minutes; Cooking time: 10 minutes.
Ingredients:
- 2 eggs
- 1 tbsp spring onions, chopped
- 1 pork sausage or a sausage patty, chopped – can be reduced -fat too. I also use different flavours too for this type of frittata.
- 1 tablespoon, grated cheddar cheese or Red Leicester cheese
- 1 tablespoon bell peppers – green and red, chopped
- pinch of salt and freshy ground black pepper
Preparation:
- Grease or spray the tray of an air fryer with cooking spray which can also be non-fat. It’s also possible to use a smear of olive oil.
- Add the chopped sausage in the prepared pan and air fry at 180ºC/350ºF for 5 minutes.
- In a bowl, whisk together the eggs, pepper and salt. Add the bell peppers, spring onions and mix well.
- Sprinkle with cheese and air fry at 180ºC/350ºF for 5 minutes.
- Serve
