Roasted Salmon Fillets With A Pistachio, Wasabi Mayonnaise Topping

The preparation time is less than 5 minutes whilst the roasting is between 15 and 20 minutes.

Serves 4

Ingredients:
4 salmon fillets, skin on
½ cup pistachio nuts, shelled, toasted* and coarsely chopped

For the Wasabi Mayo:

  • ½ cup full or lite mayonnaise
  • 2 teaspoons wasabi powder (adjust to taste)
  • ½ teaspoon Splenda (or to taste)

Preparation

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Wasabi Mayo: In a small bowl, mix together the lite mayo, wasabi powder, and Splenda. Adjust the quantities to suit your taste, adding more wasabi for extra heat or more Splenda for a touch of sweetness. Set aside.
  3. Prepare the Salmon:
    • Place the salmon fillets on a baking sheet lined with parchment paper or lightly oiled aluminum foil, skin side down.
    • Season the fillets with a little salt and pepper.
  4. Top the Salmon:
    • Spread a generous layer of the wasabi mayo mixture on top of each salmon fillet.
    • Sprinkle the coarsely chopped toasted pistachios evenly over the wasabi mayo layer on each fillet.
  5. Roast the Salmon:
    • Place the baking sheet in the preheated oven.
    • Roast the salmon for about 15-20 minutes, depending on the thickness of the fillets, until the salmon is cooked through and flakes easily with a fork. The topping should be golden and slightly crispy.
  6. Serve:
    • Remove the salmon from the oven and let it rest for a couple of minutes.
    • Serve the salmon fillets with your favorite sides, such as steamed vegetables, rice, or a fresh salad.

*To toast the pistachios, spread them in a single layer on a baking sheet and toast in a 350°F (175°C) oven for about 5-7 minutes, or until they are fragrant and lightly browned. Keep an eye on them to prevent burning.
