The year 2017 looks set to be the time for developing food services although for many these effects will not be noticeable to any great degree. we predict there will be increased interest in food safety because many more food poisoning cases will continue to come to light. There has been no let up in food borne diseases for example such as Crytosporidiosis or Salmonella.

This might also be the year that plastic use becomes limited by acts of legislation. For many years now, there has been a rise in plastic use and the number of instances of pollution from this material is constantly rising. If we are not careful we might drown in a sea composed of microbeads.

Food Trends in 2017

1. Tacos. One way to obtain your fibre. Looks like it should be sensation even though they’ve been with us for years.

2. Slow cooking – as we move to a less hectic lifestyle to counter the increasing pace of previous years, low and slow cooking has become part of the mindfulness scene. Slow-cooking generates different flavours and allows for developments that cannot be achieved with a microwave. Stews, casseroles, one-pot cooking are all becoming mainstream again.

3. Greater emphasis on umami. The Umami taste sensation has always been with us but 2017 looks like it might have an even greater shout in the world’s cuisine. Deliciousness is an absolute must.

4. Kombucha. The trendy weight loss drink is the next skinny tea or coffee. These little drinks help quell a bloated or even slightly queasy stomach.

5. Over the top Pizza Toppings. Pizzas appear to be getting crazier and crazier. They may go completely over the top. Its noticeable that retailers are offering all sorts of variants which you would not necessarily see on an Italian menu. Personally, I still prefer the traditional convention toppings. I love Quatro Formaggio. Watch out for tacos on pizza with salad and guacamole !

6. Turmeric. Powerful health properties which should be better known. Might not provide the flavour as desired but it is one of your best chances at eating a cancer fighting ingredient.

  1. I would have thought Brexit was a massive trend in everybody’s thinking. Surely we have to be thinking about how the government will tackle this enormous elephant in the room. What happens when we lose all those overseas workers picking our fruit for a start.
