The preparation time is less than 5 minutes whilst the roasting is between 15 and 20 minutes.

Ingredients:
4 salmon fillets, skin on
½ cup pistachio nuts, shelled, toasted* and coarsely chopped
For the Wasabi Mayo:
- ½ cup full or lite mayonnaise
- 2 teaspoons wasabi powder (adjust to taste)
- ½ teaspoon Splenda (or to taste)
Preparation
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Wasabi Mayo: In a small bowl, mix together the lite mayo, wasabi powder, and Splenda. Adjust the quantities to suit your taste, adding more wasabi for extra heat or more Splenda for a touch of sweetness. Set aside.
- Prepare the Salmon:
- Place the salmon fillets on a baking sheet lined with parchment paper or lightly oiled aluminum foil, skin side down.
- Season the fillets with a little salt and pepper.
- Top the Salmon:
- Spread a generous layer of the wasabi mayo mixture on top of each salmon fillet.
- Sprinkle the coarsely chopped toasted pistachios evenly over the wasabi mayo layer on each fillet.
- Roast the Salmon:
- Place the baking sheet in the preheated oven.
- Roast the salmon for about 15-20 minutes, depending on the thickness of the fillets, until the salmon is cooked through and flakes easily with a fork. The topping should be golden and slightly crispy.
- Serve:
- Remove the salmon from the oven and let it rest for a couple of minutes.
- Serve the salmon fillets with your favorite sides, such as steamed vegetables, rice, or a fresh salad.
